where can i find a good cajun marinade or a cajun sauce recipe?
I am looking for a good cajun marinade or a good cajun sauce recipe, i am in the army and when i was in ft.polk for training a few months ago, i had this spicy sausage they sold from a trailer kitchen, and it was a spicy cajun sauce they soaked in the sausage, if you know any thing,can u please help me out or if you know any good cajun marinades for steaks and or ribs

OK, there are hundreds of recipes for a cajun BBQ sauce. That’s probably what you had with the sausage. This one works pretty good.

CAJUN BARBECUE SAUCE
1 c. peanut oil
3 lg. onions, chopped
1 c. green peppers, chopped
1 c. celery, chopped
1 c. fresh parsley, chopped
2 tbsp. garlic, chopped (almost whole bulb)
3 c. steak sauce (30 oz. net wt.)
1 c. Southern Comfort
Heat oil in large pot. Add the onions, peppers and celery, cooking until soft. Add rest of ingredients, cook covered 2 to 3 hours. Serve hot at the table as a sauce over cooked meat.
OR
CAJUN MARINADE AND BASTE
1/2 c. olive oil
2 cloves of garlic, crushed
1 t. leaf thyme
1/2 ground hot red pepper
1/2 tsp. black pepper
1/4 c. vinegar
1 tsp. leaf oregano
1 tsp. salt
1/2 tsp. paprika
Combine all ingredients in jar with tight fitting cover. Shake vigorously until well blended.
OR
CAJUN MARINADE
3 c. dry red wine (white for chicken or lamb)
1 c. olive or peanut oil
2 tbsp. wine vinegar
1 tsp. garlic powder
2 tsp. onion powder
2 tsp. salt
3 tbsp. Grey Poupon mustard
3 tbsp. horseradish
3 tbsp. lime juice
2 tbsp. cayenne pepper
Combine all ingredients in blender. Marinate meat at least 3 hours.

You might be referring to what is sometimes called "red gravy". I was able to find Paul Prudhomme’s recipe here. I’m also looking at it in my Prudhomme Family Cookbook, but didn’t want to re-type the whole thing. Best of luck.
